Omelet - Avocado/Mango

Avocado/Mango Omelet
    (this one I made up from on-hand fruits as I was out of mushrooms and broccoli)

Ingredients:

bullet2 or 3 eggs
bullet1 Avocado
bullet1 Mango
Make an egg omelet as you normally would. 

The filling is enough for a three egg omelet.  You will have extra filling if you do a two egg omelet.

I use water instead of milk in the egg mixture -- it makes the omelet fluffier.

Cook on both sides
For garnish, save a few pieces of the avocado and mango for the plate.

Mash up remaining avocado with a fork.  Pick an avocado that is not hard -- easier to mash.

Cut up a mango into pieces and mix in with the avocado.

Place mixture on half of the cooked omelet.  Mixture will be cold.

Fold over other half of the omelet.

Put on plate

Garnish with left over mango or avocado -- or if you did a two egg omelet, garnish with left over mixture.

I like to use hot sauce and salt to finish it off.
