
Avocado/Mango Omelet
(this one I made up from on-hand fruits
as I was out of mushrooms and broccoli)
Ingredients:
| 2 or 3 eggs | |
| 1 Avocado | |
| 1 Mango |
| Make an egg omelet as you
normally would.
The filling is enough for a three egg omelet. You will have extra filling if you do a two egg omelet. I use water instead of milk in the egg mixture -- it makes the omelet fluffier. |

| For garnish, save a few pieces
of the avocado and mango for the plate. Mash up remaining avocado with a fork. Pick an avocado that is not hard -- easier to mash. Cut up a mango into pieces and mix in with the avocado. |

| Place mixture on half of the
cooked omelet. Mixture will be cold. Fold over other half of the omelet. Put on plate |

| Garnish with left over mango or
avocado -- or if you did a two egg omelet, garnish with left over
mixture. I like to use hot sauce and salt to finish it off. Enjoy! |
